Description:
Green beans combined with anchovies: a light and tasty side dish from Genua, perfect with
roast meat!
Main ingredients:
600g green beans,
50g butter,
3 anchovies (without bones),
1 clove of garlic,
parsley,
olive oil,
salt, pepper
Preparation:
Wash the beans and remove both ends. Cook in salt water for about 15 minutes.
Heat the butter and some olive oil in a frying pan, chop up the anchovies, garlic and parsley and
fry for about 5 – 10 minutes. Then add the drained beans and fry for a further 5 minutes. Add
salt and pepper to taste and serve.
